Chickpeas and Spinach with Creamy Feta Cheese 


Servings: 4 Time: 30 Minutes

Sweet and tender spinach arrives in spring and cooks up in a flash. Combine it with chickpeas and sprinkle on some creamy feta cheese for a warm and satisfying dish that comes together in no time.

Ingredients

  • 2 TBS olive oil, plus 1 TBS to drizzle on at serving

  • 1 yellow onion, diced

  • 3 small cloves of garlic, mashed

  • Pinch of salt

  • 1 tsp fresh rosemary, finely chopped

  • 2 15 oz cans of chickpeas (3 cups), drained and rinsed, preferably no salt added

  •  1 cup dry white wine

  •  14 ½ oz can of diced tomatoes, preferably no salt added

  • 8 oz of baby spinach, (about 5 cups) rinsed 

  • black pepper to taste 

  • 1/3 cup Feta cheese, crumbled (2 ounces)

Preparation

Dice the onion, mash then peel the garlic cloves and finely chop the rosemary. 

Heat 2 TBS olive oil in a large skillet over medium heat until shimmering.  Add the onion, garlic, rosemary, and a pinch of salt, and cook, stirring occasionally, for 5-8 minutes until onion is soft and lightly golden. 

Add the wine and bring it to a simmer until the liquid is reduced by half.

Add the chickpeas and the tomatoes with their juice, bring to a simmer, then cover and cook for 10 minutes, stirring occasionally.

Add the spinach a few handfuls at a time, and stir until each addition is wilted.  Season with pepper. 

Transfer to serving bowls, drizzle with olive oil, crumble feta cheese on top, and serve warm.
