Strawberry Walnut Surprise

Yield: 4 Servings Time: 15 Minutes

This recipe features sweet and juicy strawberries, the satisfying crunch of walnuts, rich and creamy Greek yogurt, and a topping of dark chocolate to make a simple and elegant dessert.   Feel free to substitute whatever berries or nuts you like best.

Ingredients

  • 2 cups fresh strawberries 

  • 3/4 cup walnut pieces – about 3 ounces

  • 1 cup 2% Greek yogurt

  • 1 ounce piece of dark chocolate, at room temperature 

  • 4 small sprigs of mint for garnish (optional)

Preparation

Wash and hull berries, and slice in half or quarters if they are large. 

Place a large dollop of Greek yogurt into small serving bowls, then spoon the berries and nuts over the yogurt. 

Using a vegetable peeler, shave flat, thin shavings from a block of chocolate on top of each serving.

Garnish with a sprig of mint leaves, if using.
